Citric acid is used to make energy and is found naturally in all living things - lemon juice, for example, typically contains 30-45%. Citric acid gives antioxidant protection against harmful excess free radicals and protects natural ingredients from going stale. It may help enhance the absorption of non-haem iron (the main form of iron in food) and may help calcium gluconate and magnesium gluconate transform to their highly bio-available citrate forms. In skin creams and lotions, citric acid gives natural preservation and supports acid-alkaline balance. It also balances the acidity-alkalinity of juices and gives citrus flavour to food and drink.
