Coconut oil is safe and healthy. It comes from the nuts of the coconut palm tree, Cocos nucifera. Coconut oil is high in medium-chain triglycerides (MCTs), which digest easily and are an excellent source of energy and fuel for the body. Coconut oil is slightly lower in calories than most other fats and oils and doesn’t contain harmful trans fats or hydrogenated fats. Neither does it raise cholesterol levels. Polynesians who use coconut oil daily are known to have low cholesterol levels and little heart disease. Coconut oil is rich in lauric acid, which helps support the immune system, especially when challenged. Virgin coconut oil retains the full coconut flavour and aroma and is suitable for a raw food diet.
