Purple-red coloured red yeast rice is made by fermenting rice with the yeast Monascus purpureus (once fermented, the yeast is inactivated). It has been part of the Chinese diet since 800 AD and is also eaten in other Asian countries. Red yeast rice supports balanced lipid levels (e.g. triglycerides), important for healthy arteries, heart and blood circulation.
