Xylitol (pronounced zy-lit-ol) is an alternative natural sweetener obtained from trees (beech, birch), maize and wheat. It looks and tastes like sugar, has 40% fewer calories and a low glycaemic index (GI=7). Xylitol is broken down without insulin hormone, so has minimal effect on blood sugar levels. It supports healthy teeth and gums by helping minimise the bacteria which contribute to tooth decay. It inhibits yeast, so cannot be used for raising yeast in baking bread. Xylitol can be used in cooking.
