Carrot

Carrots belong to the same family as parsnips, fennel, dill, caraway and chervil. Carrots get their bright colour from carotenoids, plant pigment antioxidants which are powerful quenchers of damaging excess free radicals. The most well-known carotenoid in carrots is the antioxidant beta carotene, which converts to vitamin A. Carotene is important for healthy vision, especially at night, and helps balance cholesterol levels. Carrots are also a good source of antioxidant vitamin C, potassium and fibre.
